This is shown in our close bond with the many ancient olive trees from which we produce our extra virgin olive oil.
The estate is fringed by dry stone walls, and has 50,000 olive trees: 40,000 ancient specimens and 10,000 new trees, of the Ogliarola, Cellina di Nardò and Coratina varieties. With 5 hectares of holm oak woods, it covers an area of 330 hectares.
About 60% of the land is irrigated, using artesian wells with clean, drinkable water.
Particularly important are the 20 hectares of unspoilt Mediterranean scrub with many varieties of wild herbs (thyme, rosemary, oregano, mint etc), used by the bees that make the honey we sell at the farm.
There is also a vegetable garden from which we harvest herbs and produce for the kitchen. We grow a variety of vegetable and salad crops, using completely natural methods.
